Celebrating Under the Miso-toe | Christmas 2025

This Christmas, we decided to skip the usual cinnamon and spice in favour of a bold, culinary surprise. Our mission was to inject a serious dose of umami into the festive season.

The breakthrough came during a brainstorming session when inspiration struck: "Snow.. Santa Claus.. Mistletoe.. Mistletoe.. Miso-toe!"

We vividly recalled the initial skepticism—"Huh? Miso and soft serve? Isn't that weird?".

 But the final product was consistently a massive crowd-pleaser back when we first launched at Icon Village in 2018. 

The deep, savoury notes of miso didn't taste odd; they translated into a profound, earthy sweetness, reminiscent of rich maple or burnt caramel.

We knew we had to bring that beloved profile back!

To recreate that intense, balanced flavour, we made a choice to use Red Miso over the milder white variety.

Why Red Miso

  • Longer Fermentation = Deeper Umami: Red miso undergoes a significantly longer fermentation period. This extended time yields richer umami and a deeper, more pronounced savouriness that is essential for cutting through the richness of the cream.

  • Bolder Composition for Balance: Red miso typically uses a higher ratio of soybeans and less rice than white miso. This yields a bolder, saltier profile, preventing the final creamy texture from tasting sweet and flat.

Miso Soft Serve

Bold pairing deep umami of miso soft serve with the caramelized, nutty, slightly tart flavour of Norwegian Brunost (brown cheese).

Miso Matcha/Houjicha Cloud

A festive drink featuring a signature tea latte base and crowned with a light whipped miso cloud.

This was formulated to be a creamy, deeply umami-rich and perfectly balanced drink.

Overall is intensely satisfying, delivering a flavour profile that strikingly feels like drinking a salted caramel foam, but with a complexity and depth achieved only through high-quality miso.

Miso Matcha Udon with Fried Ebi

Thick, chewy udon noodles coated in creamy miso-matcha sauce.

Fresh, savoury and full of umami.

To add extra crunch and richness, we paired it with golden crispy ebi fry, sautéed mushrooms, silky sous-vide egg and a touch of tobiko for that final pop of bite. 

Matcha Pancake with Miso Kuromitsu

Festive stack of matcha pancakes with deep caramel miso kuromitsu, raspberry coulis, and fresh berries.

Inspired by the original Osaka fluffy pancake, we tweaked the recipe and created a matcha pancake base paired with miso kuromitsu.
