ASHTA District 8 | Live Warabi Mochi

Another highlight of the grand opening at ASHTA is the introduction of a live Warabi Mochi station.

What is Warabi Mochi?

Warabi Mochi is a traditional Japanese treat - soft, chewy and delicate.

Unlike its more commonly found cousin and regular mochi, Warabi Mochi is made from bracken plant- also known as warabi—instead of glutinous rice or mochi flour.

This results in a softer, more jelly-like texture that feels impossibly smooth and light, almost melting in your mouth with every bite.

Knowing that the majority of the crowd at ASHTA is modern and innovative, we’ve spent months brainstorming and r&d ways to add innovation to this treat, making it more appealing to the audience in Indonesia.

So what's the twist?

We’ve taken the traditional Warabi Mochi and infused it with a local favourite—brown sugar. This addition was inspired by Indonesia’s strong preference for brown sugar, rooted in a long history of sugar cane cultivation, particularly in Java.

By blending the smooth, jelly-like texture of Warabi Mochi with the caramel richness of brown sugar, we’ve created a dessert that bridges the cultures of Japan and Indonesia.
But what truly sets this experience apart is the live presentation.

Unlike pre-made versions, live Warabi Mochi requires immediate enjoyment to preserve its delicate, ephemeral nature. It’s served fresh, retaining its soft, wobbly charm that melts in your mouth!

These Warabi Mochis are available in 2 flavours, with limited portions available daily.

  • Kinako - coated generously in roasted soybean powder
  • Matcha - deep, earthy flavours coated with Uji Matcha 8 powder
